Calistoga readies for seventh Winter in the Wineries Passport Series

The Calistoga Chamber of Commerce and Visitors Bureau has announced the dates of its seventh Winter in the Wineries Passport Series, beginning Saturday, Dec. 3, 2016, and running through Sunday, Feb. 5, 2017. Calistoga’s Winter in the Wineries Passport program allows passport holders access to 15 wine tastings any time during this two-month period. Additionally, passport holders will receive special restaurant offers and discounts at several of Calistoga’s lodging properties and downtown shops.

The passport price of $50 is valued at an estimated $300 in wine tastings alone and is considered the best value of tasting in Napa Valley, not to mention a great gift idea for the holidays!

With every passport stamped, passport holders are sure to enjoy the opportunity to swirl and sip in celebration of the Napa Valley’s Cabernet Season. Participating wineries include Calistoga’s boutique wineries and main street tasting rooms. Well-known wineries participating include Chateau Montelena, celebrating the 40th anniversary of the Judgment of Paris, as featured in the 2008 Hollywood film, “Bottle Shock”. Hi-Time Wine Cellars is a family-owned retail store located in Costa Mesa, California. Founded by Fritz Hanson and his brother-in-law Jim McVay. DARIO SATTUI – OWNER, CASTELLO DI AMOROSA IN CALISTOGA 

HISTORY OF CASTELLO DI AMOROSA:
Castello di Amorosa is a castle and a winery located near Calistoga, California. First opening its doors to the public in April 2007, the castle is the pet project of 4th generation vintner, Dario Sattui, who also owns and operates the V. Sattui Winery named after his great-grandfather who originally established a winery in San Francisco in 1885. The winery sits on property that was once part of an estate owned by Edward Turner Bale.

THE CASTLE
The castle interiors, which include 107 rooms on 8 levels above and below ground, cover approximately 121,000 square feet (11,200 m2). Key details and building techniques are architecturally faithful to the 12th and 13th century time period. Among many other features it has: a moat; a drawbridge; defensive towers; an interior courtyard; a torture chamber; a chapel/church; a knights' chamber; and a 72 by 30 feet (9.1 m) great hall with a 22-foot (6.7 m)-high coffered ceiling.

The torture chamber has an authentic 300-year-old iron maiden which Sattui states he bought for $13,000 in Pienza, Italy, a replica rack, prison chambers and other torture devices. The great hall features frescoes painted by two Italian artists who took about a year and a half to complete and showcases a 500 year old fireplace.

The masonry, ironwork and woodwork was fashioned by hand using old world crafting techniques. Building materials included 8,000 tons of locally quarried stone, in addition to paving stones, terra cotta roofing tiles and some 850,000 bricks imported from Europe. Extending into the hillside adjacent to the castle lies a labyrinth of caves some 900 feet (270 m) in length. Beneath the castle are a 2-acre (8,100 m2) barrel cellar and tasting rooms where visitors can sample the wines-all sold only at the Castle.

Due to Napa County restrictions, the castle and grounds cannot be rented for weddings or receptions, but are available to rent for corporate gatherings and fund raisers. In May 2012 the county ordered the winery to cease holding a weekly Catholic Mass in the chapel located on the grounds due to lack of use permits, reviews by county agencies, including traffic and building code compliance. The services were among just a few in the area where Catholics could attend a traditional Latin Mass.

HISTORY OF V. SATTUI WINERY:
V. Sattui Winery stands today as the result of hard work, dedication, and the extraordinary vision of two men who happen to be related.  Vittorio Sattui started the business in 1885 after emigrating from Genoa, Italy.  The law-abiding Vittorio was forced to shut down when Prohibition went into effect, and the winery would lay dormant until 1976, when Vittorio’s great-grandson, Dario, would realize his dream of resurrecting the family business in the town of St. Helena in Napa Valley.

RICK RUIZ – PRESIDENT, CHARLES WOODSON WINES

CHARLES WOODSON WINES IS A PROJECT THAT EMERGED FROM CURIOSITY, FRIENDSHIP AND A DESIRE TO SPREAD GOOD FORTUNE.

Charles Woodson discovered his appreciation for wine in 1998 when he arrived in Napa with the Oakland Raiders for training camp. He was intrigued when he noticed that everywhere he went people were enjoying a bottle of wine. It didn’t matter if it was an opulent dinner, low key lunch, or lazy afternoon. He was drawn to the fact that people seemed to slow down and come together over a glass of wine. Being the curious type, he not only wanted to participate in this ritual, he wanted to learn how to create it himself.

In 2001 Charles, met Rick Ruiz who was working at Robert Mondavi Winery. Rick invited Charles to visit the winery and showed him around the cellar while explaining the winemaking process from start to finish.  In that moment, Charles’ desire to actually make a wine was launched. The two worked together with another friend – who happened to be acclaimed international winemaker, Gustavo A. Gonzalez – to create the first barrel of Charles Woodson Wines. They produced a 2001 vintage Merlot that was used to support the various charities with which Charles is involved.

OUR VINEYARD AND FARMING PRACTICES
The Charles Woodson Wines vineyard is farmed with the same artisanship, precision and delicate care that is at the core of the winemaking philosophy. After an in-depth sourcing process that led Charles Woodson and the winemaking team through some of the most coveted vineyards in the Napa Valley, the site exhibiting the highest potential to define Charles Woodson Wines as a wine of structure and elegance was selected.

The chosen vineyard, owned by Heitz Bros. Vineyards, has a pedigree as exclusive as its northern Napa Valley location. The original vines were planted in 1904 by Michael and Louise, the grandparents of the current Heitz Bros. owners. As recent immigrants from the Alsace region of what was then Germany, now France, the couple wanted to find a place where they could raise a family while putting Michael’s horticultural background to use.

The result of their search was the purchase of 50 acres of prime Napa Valley soil located at the base of Diamond Mountain, just two and a half miles south of the town of Calistoga. Michael made an assortment of wines from the original vines which included varieties such as Zinfandel, Petite Syrah, and Charbono.

This section of land is still held by the Heitz family and is managed by one of the third generation brothers, Mark. A true farmer, Mark does not make wine. He prides himself on focusing solely on the grape growing process which allows him to direct all of his time and attention toward cultivating the highest quality vines possible.

After years of working in the soil and learning the climate conditions, Mark concluded that the most optimal varietals to grow in this site are of the Bordeaux family. The majority of his land is now dedicated to the production of Cabernet Sauvignon grapes that grow next to esteemed neighbors including Sterling, Clos Pegase and Schramsberg.

Jamey Whetstone sampling grapes from the Pleasant Hill vineyard in Russian RiverWhetstone Wine Cellars is a small family-owned luxury wine brand located in the heart of the Napa Valley. Here’s our story, told in Jamey Whetstone’s words:

Born in Florence, SC, I grew up the son of a Baptist preacher and moved around quite a bit before settling in Wilmington, NC. I relocated to Napa in 1996 to manage Mustards Grill, figuring I’d gain restaurant experience before heading back home to the Carolinas to open a restaurant of my own. Napa had other plans for me. My winemaking education began in 1998 at Turley Wine Cellars, where learning how to change the clutch on a tractor was more valued than knowledge of Bordeaux First Growths. I had the opportunity to take a summer sabbatical working for the Seysses family at Domaine Dujac in Morey-Saint-Denis, which cemented my love for Pinot Noir. After returning from France, I founded Whetstone Wine Cellars in 2002 while continuing my apprenticeship at Turley. In 2005, I left Turley in order to take the leap toward growing the Whetstone brand.

We purchased Whetstone Estate in February of 2011, and opened our doors in July of 2013. The centerpiece of the property is a 19th century French-style chateau, now our tasting salon, which sits on two acres located at the base of Atlas Peak Road in Napa. Other than gaining a physical location, the most significant change in the trajectory of Whetstone Wine Cellars was the full-time addition of my wife, Michelle. She’s behind the overall operations and aesthetic of our brand, and introduced our simple but effective sales motto: to be more in touch with the lost art of face-to-face communication. With the touch-screen ease of the digital sales world, we’ve made this grassroots approach a priority here at Whetstone. The quality of our wines coupled with the gorgeous setting, relaxed atmosphere and Southern hospitality make for a truly unique Wine Country experience. We look forward to seeing you soon!

Don't forget that red and white wines have different temperature requirements.  If you want to store both reds and whites together in the same wine cooler, look for a dual zone unit that has 2 independently controlled temperature zones.  Here are some general guidelines to follow:
Red Wine: 55° F to 60° F
White Wine: 49° F to 56° F
Rose Wine: 49° F to 51°F

Joe’s interest in wine was sparked by his father who collected wines in the 60s and 70s (and lucky for Joe, he was able to learn about these wines by dipping into the family cellar when his father wasn’t looking).

Working in restaurants since the age of 15, it became apparent that Joe’s passion was strong enough that he should pursue a career in wine. In 2008, he became one of only 6 people in Southern California to achieve the Sommelier Diploma from the prestigious International Sommelier Guild. While studying for his diploma, Joe also caught the traveling bug by hopping a train from San Diego all the way up the coast to Canada, where he tasted and learned about wines from the soil to the glass.

Ultimately, San Diego has captured Joe’s heart, and he’s proud to call the city home, where he’s shared his knowledge and love of wine as sommelier for small neighborhood restaurants and large resorts alike. Starting his sommelier career at Kensington Grill with San Diego’s acclaimed Urban Kitchen Group, he went on to work as the sommelier for the world famous Hotel Del Coronado and La Costa Resort.

Now sharing his expertise at all of the JC Resorts, Joe curates some of the finest wine collections in California. He also loves working with our chefs to create fun, interactive and most importantly, delicious wine events for our guests and local community.

Chef Keller reside in Las Vegas, where he operates Fleur by Hubert Keller, featuring his contemporary French cooking accented with cuisine around the world. With his palate-attuned to America’s evolving tastes, Chef Keller launchedhis widely popular Burger Bar Restaurants in Las Vegas, San Francisco and Beijing.

He has won numerous awards including the James Beard Foundation’s “Best Chef: California and has been elected to the Foundation’s prestigious Who’s Who in Food and Beverage. Food and Wine magazine tapped him as one of the Ten Best Chefs in America, and Restaurant & Institutions gave him its Ivy Award.

Chef Keller has cooked for several United States Presidents and was the first guest chef invited to the White House to personally prepare his sophisticated menu to President Clinton and his family. JEAN-PIERRE DUBRAY - THE RESORT AT PELICAN HILL
Dubray came to the United States in 1980 when he had an opportunity to be part of the opening team for La Vie en Rose restaurant in Brea, Calif. –and he has been in the Golden State ever since. In 1984, Dubray joined The Ritz-Carlton Hotel Company becoming the first dining room chef of the then newly opened The Ritz-Carlton, Laguna Niguel. In 1987, he opened The Ritz-Carlton Rancho Mirage in the Palm Springs area, and over the years was sent on 14 overseas assignments as a team trainer for the openings of Ritz-Carlton hotels around the world. It was in1991, however, when the opportunity came –to open The Ritz-Carlton, San Francisco as executive chef–that would accelerate his career to the highest level. Demonstrating exceptional skills and creativity, he helped make The Dining Room one of the country’s culinary stars and a recipient of countless honors, including the AAA Five Diamond rating and one of only two restaurants in California and 17 in all of North America with Exxon/Mobil’s Five-Star designation.

He reached the pinnacle of accomplishment and recognition at The Ritz-Carlton, San Francisco –establishing the credentials to take the culinary reins of The Resort at Pelican Hill®, where he oversees Andrea Ristorante, the Coliseum Pool &Grill, Pelican Grill at Pelican Hill Golf Club®, the Resort’s pastry and bakery operations, in-room dining to 128 Villas and 204 Bungalows, and catering and special event services, both on-site and off-premise. Chef Dubray has been a guest chef for a James Beard Foundation event in San Francisco and for numerous charitable events for such organizations as the March of Dimes and Meals On Wheels. He has participated in many promotional events with celebrity chefs such as Paul Bocuse, Alain Ducasse and Julia Child. Among the numerous awards he has received, the Marin County Branch of the International Wine and Food Society named him “Outstanding Chef of the Year” in 2002, and later the same year the French Minister of Agriculture awarded him the prestigious “Le Merite Agricole.”

PASCAL OLHATS - PASCAL & CAFE JARDIN
Pascal Olhats is extraordinary French born, and trained Executive Chef, and restaurateur. He has won numerous awards, owning and collaborating on a number of restaurants in Newport Beach over the past 27 years. He currently owns four businesses, including: Café Jardin Restaurant & Pascal’s Tea Garden Creperie (on the lush grounds of Sherman Gardens & Library in Corona del Mar), Pascal’s Café in San Juan Capistrano (a café/ bakery/ fine dining establishment) , and Pascal’s Catering (offering full-service catering for 20 years throughout Southern California). Pascal also partners with Manassero Farms, and orchestrates breakfasts, dinners, and incredible special events, often showcasing guest chef specialties with ingredients from the farm.

Born in Normandy , France and like many chefs in Europe, it is all about apprenticeships in the kitchen. Pascal’s his first jobs were in the top kitchen of his home town of Rouen. This included, Hotel de Dieppe and La Couronne in the heart of the old city. La Couronne also happens to be the first restaurant Julia Child visit when she and her husband moved to France. She enjoyed the Sole Meuniere by the way.)

Next stop was Brussels and Pascal spent 4 years attending school at the CERIA, a hotel and restaurant college. From there he worked for the well-known Chef Paul Bocuse, first as a server and then as Chef de Rang (Assistant Head Waiter). From there he moved to Lyon, which is well known for the production and weaving of silk, capital of gastronomy in France, and home to Paul Bocuse’s inside food hall and market, Les Halles de Lyon on Cours Lafayette. There Pascal worked at Leon de Lyon Restaurant, as Chef de Rang. From the river’s edge, it was to the shore and St. Tropez was calling. His next job was Service Staff Manager for three years at the famous Club 55. He was also in charge of catering and cooked and served for many celebrities. . In 1984 Pascal moved to the United States working as Chef for Piret’s Restaurant, then Chef de Cuisine for Le Meridien Hotel in Newport Beach. He was also the Executive Chef at Player’s in Irvine, followed by an Executive Chef position at the Chanteclair Restaurant in Newport Beach.

In addition to managing day-to-day operations of his four businesses, Pascal consults for other restaurant groups (including: French 75, Savannah Chophouse and Brasserie Pascal), was recently hire by the Macanese government of Tourism, to promote and demonstrate their cuisine in the United States, and travels the world with groups to explore countries, culture and cuisine.

STEFANIE SALEM – FOUNDER/CEO, NEWPORT BEACH WINE AND FOOD FESTIVAL 
Stefanie Salem is the Founder & CEO of the Newport Beach Wine & Food Festival. Salem takes her entrepreneurial and international business background combined with her insatiable love for all things food, wine and cooking to curate and lead all programming for each year’s event. Her 20 years of business experience, which includes living and working in foreign countries, collaborating with political leaders and leading projects with economic corporations, has played a key role in helping her secure high-profile sponsors, participants and partners to make the Festival a true world-class event.

OUR HISTORY
Forty-three years ago, our restaurant was built with tradition and has since continued with tradition. At our home in the old marketplace, we tribute our ancestors who came to America in the late 1800’s – their spirit and their recipes!

A little about this old building…
Originally built as an L-shaped marketplace in the days when Fullerton was an orchard (early 1900’s), the local farmers would bring their produce in from the fields by horse and wagon to sell to the townspeople. The original wood trusses of the old roof system may still be seen in the Venetian Room. Approximately twenty years later, renovation of the building changed it from its original L-shape to a square. This was accomplished by the large wood barrel trusses (an unusual truss!), which can be seen in the Sicilian Room and the Piazza Fantasia. During our renovation in 1992, the old wood, terra cotta tiles and brick was salvaged and re-used to keep alive the feeling and memories of those days long ago.

Be prepared when you walk into Angelo’s and Vinci’s Ristorante to be overwhelmed! With surprises in every corner, you won’t know where to look first! You will sit amidst the art of the great masters, in an Italian town square complete with the storefronts of old Italian butcher and cheese mongers, fruit and wine vendors, seamstresses showing their wares, and more. Fairy lights abound under cathedral ceilings as our ancestors smile down at you from the Family Love Altar. JONATHAN NAGY – WINEMAKER, BYRON

To really understand Byron, one must spend some time exploring the Nielson Vineyard that surrounds the winery. More than just the primary source of fruit for Byron’s wines, it has great historical significance as Santa Barbara’s first commercial vineyard. When planted in 1964 by Uriel Nielson, this gently canted site was deemed too cold and inhospitable for grapes, but time has proved the naysayers wrong.

Ken Brown, Byron’s founder, acquired the 432-acre Nielson Vineyard in 1989, five years after he launched the winery. It is located roughly 18 miles east of the Pacific Ocean at 500 to 750 feet above sea level. Chilling winds and thin soils ensure that Byron’s wines possess great intensity, heightened aromatics and firm structure.

Since day one, Byron has been a bastion of experimentation. The early years were devoted to researching clones, rootstock, vine spacing, trellising and farming. Since becoming head winemaker in 2003, Jonathan Nagy has continued down the path of research and innovation. He has also implemented many new methods including red/green fruit drop, intensive sorting, native yeast fermentations and small-lot fermentations. Under Jonathan’s watchful eye Byron Winery produces spectacularly rich and exotic Pinot Noirs and Chardonnays from the Nielson Vineyard and other premier sites in Santa Barbara County. The region once deemed “too cold and inhospitable” is now widely regarded as one of America’s greatest AVAs.

SINGLE-VINEYARD AND LIMITED BOTTLINGS
Hartford Family Winery specializes in making wines from single vineyard sites. In recent vintages we have made about 25 different single vineyard bottling’s Small and low-yielding vineyards deliver meager amounts of expressive and personality-rich wine. Our single-vineyard Hartford Court Pinot Noirs and Chardonnays total as few as 93 cases up to about 800 cases. Likewise, our Hartford Old-Vine Zinfandels are produced in small quantities. Our single vineyard wines are highly allocated.

Pinot Noir
We love Pinot Noir and in many years make about 15 of them with fruit from the Russian River Valley, Sonoma Coast, Green Valley, Carneros, Anderson Valley, Marin and Oregon appellations. We feel that Pinot Noir makes the most seductive red wine, notable for its supple, silky texture. Pinot Noir is also known for expressing vineyard site characteristics in a transparent manner.

Chardonnay
Cool climate Sonoma Coast and Russian River Valley Chardonnay vineyards are singularly expressive. Those that are planted with multiple clones, specially matched to their sites, also reflect the distinctive terroir in these high-risk, high-reward locations.

Old-Vine Zinfandel
Our 80-100 year old Zinfandel vineyards are irreplaceable treasures. We source our vineyard designated Russian River Valley Zinfandels (150-500 cases) from some of the oldest Zinfandel vineyards in California. The complexity and depth of flavors from these vineyards produce the most consistently bold and unctuous Zinfandels found anywhere.

Russian River Valley Appellation Chardonnay, Pinot Noir & Zinfandel
In addition to our small vineyard designated bottlings, we make a Russian River Chardonnay, Russian River Pinot Noir and Russian River Zinfandel that are made from a handful of vineyards each year. These Russian River Vineyard Cuvees are now found in some of the worlds most prestigious restaurant and retailers worldwide.

ABOUT JEFF
Born and raised in South Lake Tahoe, California, Jeff Stewart is, not surprisingly, an avid skier. But it was a summer trip to France and an enthusiastic chemistry teacher that enticed him away from the mountains and into winemaking.

"My summer in France was really my first experience with wine as part of the family meal. I was fascinated with the lifestyle and the importance of wine in that culture," says Hartford Family Winemaker and General Manager, Jeff Stewart. "I knew I wanted to pursue a career in science and after several conversations with my high school chemistry teacher, I was soon enrolled in the Viticulture and Enology program at U.C. Davis. The idea of combining agriculture, science and the creativity of making wine, something celebrated and revered in many cultures for thousands of years, was mesmerizing."

A UC Davis graduate with a degree in Fermentation Science, Viticulture, and Enology, Jeff has been making Pinot Noir, Chardonnay and Old Vine Zinfandel in the Russian River and Sonoma County for over 25 years.

WINEMAKER/VITICULTURIST JAMES ONTIVEROS - NATIVE 9 / ALTA MARIA 

James can trace his California roots back to 1781, when Josef Ontiveros rode on horseback into Alta California and the family became the recipient of a Mexican land grant. At one time, the Ontiveros Family owned over 36,000 acres in modern-day Orange county. They then sold El Cajon de Santa Ana and Los Coyotes and moved to Santa Barbara county. The 1837 Rancho Tepusquet grant – nearly 9,000 acres bordered by the Sisquoc and Cuyama Rivers – was passed to Don Juan Pacifico Ontiveros, who constructed the Ontiveros Adobe on the property in 1856. He and his wife raised horses, cattle, sheep, several grain crops and grapes.

Over the eight generations that came before him, this cattle and farm land was divided and passed down until the mid-nineteenth century, at which point it had been completely sold off and none of the original land grant remained in their name.

Rancho Ontiveros Vineyard, one of the vineyard sources for Alta Maria, was not inherited; it has been built over the last 20 years. Mark and Louise, James' mother and father, worked to buy the ranch in 1986 with a wistful view of the original property of Rancho Tepusquet that once had been their own. James was the first in his family to go to college and became interesed in viticulture and winemaking while at Cal Poly San Luis Obispo.

James grew up ranching, but the wine business was fast becoming James' new love. The irony was that his family were cattle people with a little bit of a farming background; they were cowboys, not winemakers; over time that has changed.

James attendeed California Polytechnic University San Luis Obispo working on dual degrees in Fruit Science and Crop Science. While in college in 1997 James planted 8 acres of Pinot Noir at Rancho Ontiveros Vineyard.

James has worked with Kendall-Jackson as a Field Supervisor throughout the Central Coast, with Gallo-Sonoma in grower relations in the North Coast and vineyard manager in Sonoma Coast and the Russian River. Most importantly for Alta Maria’s evolution, James took a position with the Miller family as Director of Sales and Marketing for 10 years which included over-seeing the Bien Nacido Vineyard, Solomon Hills, French Camp, CCWS and Paso Robles wine services. This was the property where his great, great, great, great grandfather Juan Pacifico Ontiveros had built the adobe on their original land grant.

With the 2004 vintage, James joined forces with Paul Wilkins, winemaker and long-time college friend, to start Alta Maria focusing on important sites for Chardonnay and Pinot Noir from only the Santa Maria Valley AVA. They wanted to make genuine, honest and authentic wines that were inspired by the old world wines they loved. Much like James’ family history in California, Alta Maria reflects the heritage when times were simpler, people worked with the earth and were fulfilled personally and professionally by hard work.

Since 2005, Paul and James Ontiveros have been making Alta Maria Vineyards wines and in 2011 opened a much-anticipated joint tasting room for Alta Maria Vineyards and Native9 in Los Olivos, California. Alta Maria wines are sold in over a dozen states and export markets.

TOBIN SHARP FROM HI-TIME WINE CELLARS

Hi-Time Wine Cellars is a family-owned retail store located in Costa Mesa, California. Founded by Fritz Hanson and his brother-in-law Jim McVay. Hi-Time opened its cellar doors in 1957  at its original location on 17th and Irvine in Costa Mesa, California. In 1984, the Hanson brothers moved to our present location in Costa Mesa where they built one of the largest underground temperature-controlled wine cellars in the U.S . This 3,000 square foot underground temperature-controlled cellar now includes a selection of 10,000+ wines from many different wineries from all around the world. This selection represents the world's finest growing regions from such diverse areas as California, Oregon, Washington, France, Italy, Spain, Hungary, Germany, Austria, New Zealand, Australia, Eastern Europe, South Africa, South America and Portugal.

The recently re-designed store now has a retail space of 24,000 square feet. We added many new and exotic labels to our selection. Along with our selection of rare wines you will also discover hard-to-find spirits, espcially in the Bourbon and Scotch aisles, and exotic liquors from all over the world. In addition, we offer a comprehensive selection of North American micro-brews along with some of the best beers the rest of the world creates. Our walk-in beer refrigerator offers over 1,200 different beers from 25+ different countries. Our walk-in tobacco humidor holds over 500 different cigar brands and sizes as well as a great selection of pipes and fine pipe tobaccos.  We also offer gourmet foods, specialty chocolates, cheeses and charcuterie.

OUR STORY
Fritz Hanson and Jim McVay founded the store in 1957. Jim, unfortunately, passed away many years ago. Shortly after opening the store, Fritz's younger brother Chuck Hanson joined the Hi-Time team. Chuck was interested in wine right away and became the store's primary wine buyer. Most of the business at that time consisted of distilled spirits and jug wines. Chuck remembers the first wines to make a big impression on him were those of Charles Krug and Louis Martini.

Harold Hanson, who was in the military overseas at the time, joined Hi-Time after completing his tour of duty. While in the service in Europe, Harold took pictures of wine caves in Burgundy. Bringing the photos back to his brothers, it was decided that they would build a wine cave within the store. Harold became the General Manger for the store, a position he held for over 40 years.

Our original location (pictured on the left)! Those were the days... the wine cellar and La Cave next door. La Cave is still there but we're up the street a bit. Well, tempus fugit, as they say. Hi-Time moved to our current location in 1984... prior to that, the building we're housed in was a telephone company. The underground wine cellar had to be dug out to provide a home for our wines! The groundbreaking ceremony for our building expansion (the new beer area and shipping) was in 2004. What's next? Who Knows! Stay Tuned!  ***Yes, more construction in the works... pardon our mess as we strive to make our store better! Facelift at 50? Why not! A few years ago Patterson's Beverage Journal honored the Hanson family for Hi-time Wine Cellars with their Lifetime Achievement Award.

HI-TIME TODAY
Fritz is semi-retired but we always need his help when there's construction to be done... or stocking the liquor shelves during the holidays! Chuck Hanson is still here! Well, at least for a couple days a week he helps keep an eye on the wine department along with keeping up on the latest wines. He knows just about everyone in the California wine industry. Harold has also retired but still stops by a few times a week to check up on things. Today the store is managed by Fritz's oldest daughter Diana Hirst. Both his sons Keith (spirits buyer) and Donnie (clerk) work alongside Diana making Hi-Time the thriving business it is today. Fritz's other daughter Linda is working as an assistant winemaker for Hanzel Winery. Four of Fritz's grandchildren Charlie, Kyle, Jordan and Skylar are working in the store as the 3rd generation of the Hanson family legacy.

FRED SCHERRER – SCHERRER WINERY

THE WINERY AND WINEMAKING
In the mid-1970’s, due to a normal teenage interest in alcoholic beverages, my family allowed me to make some wine from the family vineyard and beer at home (under adult supervision, of course). This led to a UC Davis degree as well as concurrent work at a local winery doing the dirtiest and most menial jobs imaginable. In the mid-1980’s good friends at Duxoup Wine Works (think Marx Brothers for the pronunciation) inspired me to try my hand at my own label so I negotiated cellar space in lieu of a raise by my then-current employer, Greenwood Ridge Vineyards in Anderson Valley (I got a raise anyway). Greenwood Ridge was supportive of my project and decided to have some Scherrer Zinfandel produced for their label as well. Unfortunately, I had a poor business plan and during the first year I realized I was not yet ready for this project. Greenwood Ridge continues to make a small amount of Scherrer Vineyard Zinfandel to this day.

Enter Dehlinger Winery in the late 1980’s. Tom Dehlinger was very supportive of my long-term plans and challenged me to develop a solid business plan, facilitating an important entry into my own project. In return, his winery received my heart and soul for a decade. The final key element in our getting started was from my parents. They allowed me to delay paying them for their fine grapes until we began getting cash flow from our wine sales. By 1997, we were ready to make the move to a facility of our own. In anticipation of this, we were able to add Cabernet Sauvignon and Chardonnay to supplement the Zinfandel we were producing, all from my father’s vineyard in Alexander Valley. Tom Dehlinger supported this transition of my focus, allowing me to produce these additional wines in his facility and we parted very amicably after that vintage.

And so after the harvest of 1997, I moved our operation to a corner of an apple packing shed-turned-winery, finally leasing the entire building. During this period, our production grew from just the three varietals from Scherrer Vineyard, to now typically a dozen wines, about half of which are Pinot Noir. Total production is now 4000 to 5000 cases. My good friend, Don Bliss helped me whenever I needed a hand (or a finger to dial 911 in the unlikely event of a forklift mistake) throughout this period until he sold his fine vineyard and moved back to his native Texas in 2006. Since then, I have been able to impose on a handful of friends and local customers when I have needed help, but still continue to work at the winery pretty much alone most of the year. Judi, my wife, has handled administrative and compliance for the winery since 2002, keeping me out of trouble with bureaucrats and making sure we are able to conform with the complex and changing world of direct shipping and wholesaling laws, reports and fees.

Christian Roguenant is a true industry veteran having traveled the world to make wine on five continents, including fifteen years with Champagne Deutz, one of the premier Champagne houses in France, and serviced as a consultant to wineries around the world, from Argentina to Australia, and New Zealand to South Korea. Today, Christian enjoys sharing his extensive knowledge of True Myth, a specialty appellation winery that produces wines from regions along California’s Central Coast, focusing on Chardonnay from Edna Valley and Cabernet Sauvignon from Paso Robles.  Christian can speak to California’s Central Coast winemaking, the Central Coast lifestyle, and food and wine recommendations.

Christian Roguenant was born to make wine. A native of the Burgundy region of France, he grew up surrounded by vineyards. Christian decided early on to become a winemaker, studying enology and winemaking at the University of Dijon. The opportunity to make exceptional wines in San Luis Obispo County led him to the Central Coast. He is a Chardonnay master with over 30 vintages under his belt and has been with the Niven Family for over 18 years. FAMILY HISTORY
Jack Niven came to San Luis Obispo in the early 1970s with the vision to plant a vineyard in what was then a valley of dairy farms and garbanzo beans. After working with the top viticulture professors from UC Davis and Fresno State, he determined the perfect location and planted the Paragon Vineyard in 1973. Home to the oldest continually producing Chardonnay vines in the region, the Niven family has owned and farmed this vineyard for more than 40 years. Jack later went on to petition to establish Edna Valley as an official American Viticultural Area (AVA) in 1982.

The second and third generations of the Niven family have since continued his legacy. Today their portfolio focuses on exploring the endless potential and diversity in their historic Paragon Vineyard and throughout San Luis Obispo County.

True Myth is a new take on the legacy that was built by Jack Niven. The family is now striving to create a fresh new vision for the longstanding quality of the region.

ABOUT BAILEYANA
Over 30 years ago, an incredibly smart and spirited woman planted a 3 acre vineyard on her home property in the Edna Valley. Diving without hesitation into a male-dominated industry, Catharine Niven later set out to create authentic, complex yet elegant wines. Named for the place she met her husband Jack, Baileyana offers beautiful, cool-climate Chardonnay and Pinot Noir. Both are refined, rich, and perfectly balanced. She wasn’t entirely surprised by Baileyana’s early success, but Catharine didn’t dream that her small project would become the family legacy that it is today. Now in the expert hands of the next two generations, Baileyana wines remain true to her pioneering spirit, as well as to the genuine, elegant style she exuded when walking into any room.
